Baked Falafel

Tasty baked falafel, prepared in just under 5 minutes. We like to enjoy these for lunch, popped into Pitta breads with salad & hummus. They're also perfect served as a weaning beginners lunch. Suitable for freezing too.

Easy

Ingredients

1 can chickpeas, drained & rinsed

1 onion, chopped

2 garlic cloves

Zest of 1 lemon

2 tsp cumin

Small handful coriander

3 tbsp flour

Method

1) Place all ingredients, into a bowl and blend until smooth.

2) Spoon portions of the mix onto a baking tray, and shape into a small pattie about an inch thick.

3) Bake in the oven on 180c for 20-25 mins until they have a firm outside - they will still be a little squidgy in the middle.

We love to batch cook!

This yummy recipe can be frozen for up to 3 months.
