Looking for a tasty breakfast or brunch treat that chimes with the changing season? With colours reminiscent of the turning leaves, this Maple French Toast is so delicious that you’ll probably want to eat it for breakfast, lunch and dinner.

Makes: 6 servings

Ingredients

  • 6 medium eggs, whisked
  • 1 cup (250ml) full-fat milk (any will work — cow’s, soya, oat, coconut, breast or formula)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla bean paste or extract
  • 2 tablespoons maple syrup or fruit purée (plus extra to serve, if you so desire)
  • 6 slices of bread
  • 1 tablespoon coconut oil, for frying
  • Sliced fruit of your choice, for the topping (optional)

Method

  1. In a bowl, whisk together all of the ingredients, except the bread, oil and toppings.
  2. Pour the mixture onto a plate and soak each slice of bread for 2 minutes on each side.
  3. In a frying pan, heat the oil over a medium heat and add the slices of bread, frying each slice for 2–3 minutes on each side, until golden brown — this will need to be done in batches.
  4. Serve once cooled, with a selection of fruit.

Notes

Feel free to halve the recipe, if desired. Leftovers can be frozen and reheated directly from frozen in your toaster!
