Bursting with flavour and totally customisable, they combine the best of both worlds - fluffy baby-friendly pancakes with all the ease of a. finger food. Whether you serve them up for breakfast, snack-time, or a playful dessert, this recipe is sure to become a family favourite. Your little one will love helping decorate their own pancake "pizzas," making it just as fun to make as it is to eat!
Ingredients:
2 bananas, preferably overripe
250g oats
150ml milk
2 eggs
1 tsp baking powder
1 tsp ground cinnamon
1 tsp vanilla extract
50g unsalted butter, for frying
Method:
- Make the pancake batter by adding all the ingredients except the butter into a blender. Blend for 10-15 seconds
- On a medium to low heat, melt a little bit of the butter in a frying pan, pour a little of the batter into the pan and cook for just over a minute until bubbles begin to form
- Flip the pancake over and cook for a further minute on the other side
- Repeat until you have used up all of the remaining butter and pancake batter
- Spread each pancake with your choice of sauce and toppings, whether sweet or savoury. Slice into quarters or eighths and enjoy like a pizza!
- We opted for Nutella and fruit!
Flavour & Texture Adaptation
Vegan pancake batter: Swap the eggs and milk for mashed banana and 100 ml plant-based milk, and cook the pancakes in a neutral oil or plant-based butter.
